chore(release): prepare Grid v0.2.1 - #407

Bump both workspaces to 0.2.1 and the five release charts to 0.2.1 with matching AGN appVersions. The praxis-gateway appVersion stays 0.7.0: it tracks the official Praxis AI image, not the AGN tag. Bump praxis-gateway overlay.sidecar.image.tag to v0.2.1 and its README row. That value is pinned by hand because an empty tag resolves to the chart appVersion, which is the Praxis AI version rather than a grid-overlay-sync tag. Regenerate deploy/operator and deploy/overlays from the operator chart. They carry the operator image tag and the kind version label, so they move with the chart appVersion. The manifests under deploy/operator and deploy/overlays render from charts/grid-operator, so they carry the operator image tag and the kind version label. They landed after 0.2.0 and the pre-release checklist never learned about them, so a release could bump the charts and leave the vendorable base pinned at the previous tag.
