Update ecs/Dockerfile to use a maintained Alpine version (3.19 EOL soon) #125

Steps to reproduce

• Build the Docker image using ecs/Dockerfile, which currently uses alpine:3.19 as the base image.
• Observe that Alpine 3.19 will reach end-of-life on 01 Nov 2025, as noted on https://alpinelinux.org/releases/
• This may result in lack of security updates or unavailable packages in the near future.

Expected behavior

• Docker image should use a non-EOL base image to ensure continued security and package support.

Actual behavior

• The image still uses Alpine 3.19, which is about to reach its end of life in less than two months.
