DEV: Use model extension APIs instead of modifyClass - #83

Replaces the `model:composer` override with the granular model extension APIs. The two-way `ratings` computed is split into an explicit source of truth and pure derivations: the user's entered values live in a tracked `ratingValues` field (`addModelField`) written through a `setRating` method, with `ratings`/`ratingsToSave`/`showRatings`/`allowedRatingTypes` and friends derived from it via `addModelGetter`, plus `ratingsString` as an `addModelAccessor` for draft serialization. The save and draft payloads are unchanged.

modifyClass("model:*", ...);is being deprecated, so this PR replaces themodel:composeroverride with the granular model extension APIs.
